Chocolate Surprise Cupcakes

You've had them before, maybe at a wedding or a specialty cupcake store.  Those fancy cupcakes with a filling inside that gives another flavor layer to the cake.  They're easier to make than you might think.  And your options for fillings are endless!  

 

Chocolate Surprise Cupcakes

TCE White or Dark Chocolate Baking Mix

Egg, Oil, Water

TCE Buttercream Frosting Mix

Almond or Vanilla extract

Butter, softened

Heavy Cream

Filling of choice

 

Make cake mix according to directions on the bagNote that The Cocoa Exchange baking mixes come in a resealable package because one bag makes 3 full batches! 

You can easily make a Spice Cake by adding 3 Tbs Spiced Chai Tea Mix to the White Chocolate Baking Mix recipe. 

Fill cupcake liners 2/3 full and bake according to directions on package. 

After the cupcakes have cooled, scoop out the center to make room for the filling.  Try using an apple corer for full size cupcakes or a strawberry huller for mini cupcakes.  Use caution so as to leave all sides and bottom of the cupcake intact.  

     

Next, you want to choose your filling.  You can use frosting, but consider adding another flavor instead.

One of my favorite fillings is TCE Raspberry Amaretto Preserves.  

You can also add 1/4 cup TCE Chocolate Martini Mix to whipped cream to make a creamy filling. 

The options for fillings are truly endless!

      

If you have a pastry bag and tip, you may want to use that to fill your cupcakes with your filling of choice.  Depending on the filling, you may be able to simply spoon it into your cupcakes.  Be sure not to overfill.  

Now it's time to frost your cupcakes. Mix TCE Buttercream Frosting with Heavy Cream and Butter according to directions.  Add flavor to your frosting by adding 2 tsps of extract (my favorite is Almond!) or 3 oz melted chocolate.  

If you do  not have a pastry bag, you can utilize a plastic sandwich bag for frosting.  I recommend placing your sandwich bag or pastry bag in a cup to assist you when filling your bag with frosting.  Remove the bag from the cup and cut one corner.  Press gently on the back of the bag and frost in a spiral for a picture perfect finish.
