In addition to these Turkey Spinach Meatballs, we also prepped 4 other meals! In fact, all these meals were low carb and low sugar! Yes! It's chocolate and it's low sugar! Wow! This was perfect for my family, because we have been trying the low carb Keto Diet. Of course, not all the recipes are low carb, so there is something for everyone. Mushroom Marsala Meatloaf
1.5 lbs Ground Beef
8 mushrooms, sliced
1/4 cup diced onion
1/2 cup TCE Mushroom Marsala Sauce
Mix together. Form into loaf. Freeze. When ready, defrost and bake at 350* for 45 minutes.
Mexican Chicken Fajitas
3 peppers, sliced
1 onion, sliced
2 Tbs TCE Sweet n Spicy Cocoa Rub
2 chicken breasts, cut into strips
1/3 cup TCE Mexican Simmer Sauce
Add all ingredients in freezer bag. Freeze. When ready to cook, dump ingredients into frying pan and saute until desired doneness. Serve on rice or tortillas.
2 zucchini, cut into 1/4 inch lengthwise slices
1 lb Ground Beef
10 oz Bella Mushrooms, sliced
1/2 onion, diced
15 oz jar Tomato Sauce
3/4 cup TCE Mushroom Marsala Sauce
15oz Ricotta Cheese
1/4 cup grated Parmesean
1/4 cup Basil leaves, chopped
8 oz Mozzarella, shredded
Brown ground beef in a skillet over medium-high heat. When cooked, drain fat. Saute olive oil, mushrooms, and onions for 5 minutes, then add Marsala Sauce and Tomato Sauce. Reduce heat to low and simmer 5 minutes. In a bowl, combine ricotta , parmesean, basil and salt and pepper. To assemble, ladle meat sauce on bottom of 8 x 8 disposable pan. Next, add a single layer of zucchini followed by meat sauce, a layer of ricotta mix, and a layer of mozzarella. Repeat these layerss and end with mozzarella on top. Freeze. When ready, defrost. Bake for 20-25 mins at 350* F until bubbly and browned.
Beef and Veggie Meatloaf with Bacon & BBQ Glaze
1 lb Ground Beef
1 egg white
1/2 cup breadcrumbs or almond flour
1/8 cup TCE Carolina BBQ Sauce
2 shakes soy sauce
1/4 cup onion, diced
1/2 zucchini , grated (squeeze liquid out)
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
2 tsp Fresh Parsley, chopped
2 slices Bacon, cut in half
1/2 cup TCE Carolina BBQ Sauce, for basting
In a bowl, combine all ingredients except bacon. Mix well and form a loaf. Lay bacon slices on top. Freeze. When ready, defrost and glaze with Carolina BBQ Sauce. Bake at 400* for 15 minutes. Baste with more sauce and bake an additional 15 minutes. Slice and enjoy.
