Halloween Recipes - appetizers

Everybody loves Halloween!!  The costumes, candy, and spooky fun are always a TREAT!  

Wether you're throwing a Halloween Party or just looking for a Halloween activity to do with the kids, these Halloween Recipes are a sure hit!  

Pepper Popper Mummies

12 mini Bell Peppers                                                                                                                1 stick of String Cheese

6 strips of Bacon, cooked & diced                                                                   24 small Capers

8 oz canister of Crescent Roll Dough                                                        8 oz Cream Cheese, softened

1 1/2 tsp TCE Burger Seasoning                                                                            1 1/2 tsp TCE Mexican Seasoning Blend

1/3 cup shredded Cheddar Cheese

 

Preheat oven to 400* F and line a baking sheet with parchment paper.

Combine cream cheese, cheddar cheese, burger seasoning and mexican seasoning in a small bowl.

Cut peppers, length-wise.  (Save smaller half as the coffin lid) Remove seeds and white veins from inside the pepper.

Roll out crescent roll dough  to an even thickness.  Use a pizza cutter to cut 1/4 inch strips.

Divide chopped bacon into pepper cavities, then fill with cheese mixture.

Wrap 2 strips of crescent roll around each pepper, making sure to leave room for the "eyes". 

Place on baking sheet and bake for 13-15 minutes or until golden brown. 

Meanwhile cut small slices of the string cheese to form ovals.

Remove the peppers from the oven and place the cut string cheese pieces  on each pepper as "eyes".    The heat from the pepper will soften the cheese.  Wait 5 minutes for the cheese to soften, before placing two capers in the cheese to complete the eyes.

Serve immediately.  

 

Guacamole Deviled Eyes

 

6 hard-boiled Eggs                                                                                                    2 Tbs Onions, diced (optional)

1 ripe Avocado                                                                                                                    1 Tbs Cilantro, diced

2 tsp TCE Green Chili Hot Sauce                                                       1 Tbs Chives, sliced thin

1 Tbs Lime Juice                                                                                                                 2 tsp TCE Mexican Seasoning Blend

3 sliced Black Olives                                                                                                  sliced red pepper or pimentos 

optional: green food coloring

 

Cut eggs in half lengthwise, remove yolks and place in mixing bowl.  Place egg halves on serving platter.

Cut avocado in half and remove the pit.  Scoop out avocado flesh and add to the mixing bowl.  Roughly mix avocado and yolks with a fork.  Add lime juice, TCE Green Chili Hot Sauce, and TCE Mexican Seasoning.  Mix well and fold in optional onions and cilantro.   Add green food coloring if desired.

Scoop a generous spoonful of the mixture into each hard-boiled egg half.  

To make "EYEBALLS"....Place a  slice of black olive in the middle of the green mixture.

Cut red pepper or pimentos into thin, curvy lines and place on the egg whites to make your "eyes" look bloodshot.  

***  For a less scary version, you can make SPIDERS on your eggs instead of eyeballs.   In this version, place one half of a black olive  in the center of the filled egg.  Cut the other half of the black olive into  thin slices for the spider legs.  

 

 

Fun Frankenstein Avocado Toast

1 ripe Avocado                                                                                                     Black Olives

Dried Seaweed                                                                                                     TCE  Mexican Seasoning Blend

Red Pepper or Tomato                                                                            Toast

 

Place 1 piece of toasted bread on a plate. 

Cut avocado in half and remove the pit.  Place avocado in a medium bowl and roughly mash.  Add TCE Mexican Seasoning Blend  and mix well.  

Spread avocado mixture on the toast, covering it completely.

Cut out triangles from one edge of the dried seaweed.  Place the seaweed on the top of the toast to resemble Frankenstein's head.  

Place 2 black olive halves as eyes. 

Cut red pepper or tomato to form a mouth.  

Post on instagram and  eat! ;)
